In April 2002, Ummera was awarded the Organic Trust symbol for sourcing,
processing and distribution of Certified Organic Smoked Salmon. This award
enables Ummera to add an exciting new range to our long established and
much sought after Smoked Wild Atlantic Salmon.
Ummera
recognised clear additional demand amongst consumers for a high quality
product, that could not be met without additional undesirable pressures
on limited wild salmon stocks. A number of customers expressed the desire
to access organic products, in part to reduce pressures on wild stocks
and also in preference to ordinary farmed salmon. Ummera did not want
to work with farmed salmon which in our experience would not produce
quality smoked product, but set out to assess the potential of organic
stocks. After a trial period the Company achieved a quality of product
with which it was satisfied and began the process of applying for organic
accreditation from the Organic Trust.
In meeting the demanding standards of The Organic Trust, Ummera has
justified its investment in the new smokehouse at Inchybridge. While
complying with current EU regulations and implementation of HACCP, the
new smokehouse has developed a natural wetland
system as well as a vermicomposting
unit to handle its waste in an environmentally friendly and
"organic" way. We also have an environmental
policy that outlines our commitment to environmental concerns
in all aspects of our business.
What makes Organic Salmon different?
The Organic Salmon used by Ummera are raised at the Clare Island Seafarm
six kilometres off the coast of County Mayo on the West Coast of Ireland,
in the exposed and pristine waters of the Atlantic Ocean. The farm takes
its name from the small island nearby that provides minimal shelter from
the elements. The location of this marine site is recognised as the most
exposed in Western Europe. The large robust Bridgestone cages at the site
are currently home to their fifth generation of organically farmed salmon.
The fish are reared according to strict organic principles; they grow
under much less crowded conditions than normal farmed salmon and the exposed
sites where the currents are strong give them a more natural texture;
their diet is closer to the species' normal food, and is from sustainable
sources; its rearing is not dependent on the chemical and anti-biotic
inputs normal for other farmed salmon.
- The salmon are farmed in accordance with
organic farming standards established by Naturland Verband (Germany),
the Irish Organic Farmers and Growers Association (IOFGA) which is recognised
by the Soil Association in the UK and Eco Cert International (France).
- The farm and all its related sites are audited
on an annual basis by the organic certifiers.
- Stocking densities are set at a maximum
of ten kilos per cubic meter of water. This effectively means that every
two fish share one cubic meter of water.
- The fish are fed an organic diet, which
contains all organic or natural ingredients and is free from genetically
modified organisms. The fish are fed by hand by local fishermen, who
observe the fish and their environment on a daily basis. The fishmeal
in the diet is derived from the by-products (offal/fillet trimmings)
of pelagic fish caught for human consumption.
- The pigment used in the feed is a yeast
based pigment called "phaffia", it is a natural source of
astaxanthin.
- The farming procedures adopted by the farm
are altogether more environmentally friendly, examples of this include
power washing of cage nets by seawater jet spray & the use of herbal
remedies to combat the occurrence of sea lice.
- The high tidal exchange rates (minimum exchange
rates are defined in the organic standards) and subsequent tidal swelling
which characterise the area in which the farm is situated ensures that
new water continually flushes through the cages and prevents the accumulation
of parasites and pollutants.

The other ingredients Ummera uses in its organic production come from
far away: The salt is pure sea salt from Tavira in Portugal; the sugar is raw cane sugar organically
grown in Cost Rica; the sawdust for smoking is from the sustainably oak forests.
