FSAI Approval

Following a Food Safety Authority of Ireland Audit and Inspection on February 3rd, Ummera is now approved to smoke both Fish products and Meat products. We are the first food processor in Ireland to receive this approval for both meat and fish smoking in the same premises.
We have been working towards this for the last two years and our thanks to all those whose advice has been sought and help given. In simple terms, it means that as from January 1st 2006 (if not before) we will be able to supply customers in the EU with our Smoked Chicken and our Smoked Dry Cured Rashers (Bacon).


Wild Salmon:

The 2004 Wild Salmon fishery began on June 1st and continued until the end of July. Around the Seven Heads, between Courtmacsherry and Clonakilty, our three main fishermen, Billy, Brian, and Jerry worked very hard to supply us with excellent quality salmon; they were iced and bled and, despite being a little smaller than we would like, were some of the finest fish we have seen.

Despite a further reduction in the quota for the Irish Wild Atlantic Salmon catch last summer, we were very fortunate to be able to buy close to the quantity of salmon we wanted, but at much higher prices.

After a very busy Christmas, our stocks are now limited to small sides averaging 700gms each plus a few very large sides of 1.8kgs plus.

We await with interest the Minister's confirmation of the quota for 2005. It is anticipated that it will be just under 140,000 fish which is well above the scientific advice of 97,000.

ORGANIC SALMON:
The last twelve months have seen considerable growth in demand for our smoked organic salmon. We took part in the Organic Food Fair, Bristol last September and met with a very enthusiastic response. Our organic salmon is now available in sliced packs in a number of retail outlets in the UK, and several restaurants.

BioFach 2005: Ummera took part with BIM, the Irish Seafood Marketing Board, at the Bio Fach Fair in Nuremberg, Germany, from February 24th to 27th.
